Ham & Cheese Egg Cups

These are some of my favorite ways to eat eggs! There are so many different combinations you can do.  Here are a few for you to try!

Tools: 6 cup large muffin tin (preferred)

Option 1: 
Deli Ham slices (2-3 slices per cup - sliced very thin)
6 slices provolone cheese
6 eggs 

Option 2:
Deli Corned Beef slices (2-3 per cup - sliced very thin)
6 slices swiss cheese
Sliced cooked cabbage or sauerkraut (optional)
6 eggs

Option 3:
Deli Ham slcies (2-3 per cup sliced thin)
6 slices of tomato about 1/2 inch thick 
Leaves of spinach
Ricotta cheese (1 tbsp per cup)
6 eggs

Directions:
1)Lightly grease muffin tin with oil or butter.
2)Lay down 2-3 slices of meat
3)Press in 1 slice on cheese on top of the meat
4)If there are other ingredients, place them on top (max 1 tbsp)
Crack an egg and drop into each well
Season as desired

Bake at 350 degrees until set, approximately 30 min.  Let cool before serving!
